Sunflower oil is a widely used vegetable oil, grown in many regions. The shift towards sunflower is driven by demand for higher-quality oils as resulting in consistent production growth particularly in Ukraine and Russia.
The two most common types of sunflower oil are linoleic and high oleic. Linoleic sunflower oil is a common salad dressing and cooking oil that has high levels of polyunsaturated fat. High oleic sunflower oils are classified as having monounsaturated levels of 78% and above and is significantly more stable at high temperatures. Its primary applications are where highly stable oil is required; these include deep frying and snack food frying.
